A fun spin on lasagna! The lasagna rolls are nice, individual servings of lasagna and look really pretty to serve to guests (or your family). Rolling up each noodle doesn’t take any more time than creating the layers in a typical lasagna, so don’t fret about the process.

This dish reminds me of summer! In the summer, it’s fun to grab tomatoes and basil from our tiny garden and throw this together, but it’s also nice to have a taste of summer in the off-season.
This recipe can be as spicy or mild as your own taste dictates. Want it to be more decadent? Use some of the coconut milk to cook the rice (I recommend one part water to one part coconut milk), which creates an almost risotto-like texture. Delicious!
